Spinach And Carrot Quiche

1-1/2 teaspoons vegetable oil; 1/2 onion, diced (optional); 1 clove garlic, minced (optional); 1 (10 ounce) package frozen chopped spinach, thawed; 1/4 cup shredded carrots; 1 cup shredded cheese (your choice); 3 eggs (or sometimes I use 8 eggs to make it thicker); a sprinkle of salt and pepper 1 (9 inch) frozen pie crust. Pre-heat the oven to 350. Cook the spinach in a skillet for a few minutes over medium heat and add everything but the cheese and eggs. Remove from heat and add the eggs (beaten). Add the cheese, mix it all up and pour into the pie crust. I like to top it off with additional cheese. Pop in the oven for 30 minutes. A little longer if you use 8 eggs. Its good, its healthy , its fast and leftovers are yummy for breakfast!
