Are Any Soft Cheeses Ok

I am craving soft mozzarella, cottage cheese and ricotta cheese (like canolli's and lasagna). Are any of these ok to eat? All I can think about is a mozarella and tomato salad... mmmm, that sounds so good!

Anything that is pastuerized is fine. Mozz if ok, I LOVE the mozz & tomatoe salads too! Just check all packing for pastuerization. They are referring to maxican cheeses and Brie that are not pastuerized when telling you to avoid them.

Yeah, just look on the package. I wanted Brie, but just made sure it was pasteurized.

most domestic cheeses are pasteurized. French, Swiss cheeses are the ones to look out for, imported in general, those are not always pasteurized. Also, watch out for blue cheese or any moldy cheeses. those are not so good for you. But recently i noticed i've been craving cheese too. especially goat cheese. mmm....

I have read that it isn't just the pasteurized cheese, but like the person said before, it is any cheese with mold - such as blue, or with a rind. I have read that brie is something to be careful of - but I am not sure. The only soft cheeses that seem to be consistantly ok are mozzarella and cottage cheese. I don't know why, but I have read in most books that ricotta + goats cheese (even though they don't find the rind and mold theory...) is also not recommended. You do read different information in different places, so I am not sure if people really know...??
