Creamy Chicken Enchiladas~~~
1 tbsp butter~~~
1 med chopped onion~~~
1 can chopped green chilies, drained~~~
1 (8oz) pkg cream cheese, cut up~~~
3 ½ c chopped chicken br___ts~~~
8 to 10 lg flour tortillas~~~
2 (8 oz) pkgs. Monterey Jack cheese, shredded~~~
2 ctns whipping cream~~~
Melt butter and sauté onion; add chilies and cream cheese. Cook until cheese melts on low heat. Add chicken; spoon mixture into tortillas; roll and place in 13x9 inch pan seam down. Sprinkle with cheese and drizzle with whipping cream. Bake at 350 for 45 minutes.

My best friend made this for a party I had and EVERYONE wanted the recipe - my husband won't touch it because of the cream cheese - I guess I could tell a "story" and say it has "cheese" in it.

I have never posted on the recipe forum...but seeing the enchilada recipe...I had to post.
I make make a chicken enchilada pie.. that is awesome!!!
You need
Cream of Chicken Soup-1can
Sour Creme-4oz
chopped green chilies
chicken
salt and pepper
cheese
salsa
flour tortillas
mix all the ingredients together (except the cheese) put a small thin layer of the ingredients between the tortillas (I usually have 5 layers). I then sprinkle cheese on top and since everything is already cooked...I just heat in the micrwave until done...oh you serve it with salsa.
