Just thought I'd add this recipe for those whose lo can't have dairy or eggs. It is delicious!
Into a grased 9 by 13 cake pan sift 3 cups flour, 2 cups white sugar, 1 tsp. salt, 2tsp. baking soda, 1/2 cup unsweetened cocoa powder. Make three "wells" in the dry ingridients. Fill one with 3/4 cups veg. oil, one with 2 tsp. vanilla extract, and the last one with 2 tblsp. distilled white vinegar (trust me on this). Mix all with fork. Bake in pre-heated oveb at 350 degrees 30-40 minutes- or until toothpick comes out clean. Let cool and frost. PS: You can replace the cocoa with cornstarch and add 1 tsp. orange zest for Orange Cake.
