I have gestational diabetes and have been following the GD diet and I have to eat a lot of protein. I was wondering if anyone had some good protein food ideas? I feel like all I eat is cheese! Oh and It has been really hard for me to eat chicken and eggs since becoming pg!! Anyone got any good ideas????

Hi socalmom, I'm not on the GD diet, and I don't know the particulars of it, but here are some nonchicken/egg protein ideas... Make a veggie stir fry with some strips of beef in it. Legumes are high in protein (but tend to also be about the equivalent in carbs - not sure how that will go for your diet). Here's a quick legume recipe with lentils (and hidden egg)... Boil 200ml of red lentils for 20 minutes then drain and cool. Fry a finely chopped onion and a clove of garlic (or a teaspoon of minced garlic) in some olive oil. Mix those together with the lentils. Add 4 eggs, 2 teaspoons curry powder, half a teaspoon of chilli powder, half a teaspoon of salt and 3 tablespoons ketchup. Bake in the oven at 350 Farenheit (180 Celcius) for about 40 minutes.
