Some soft cheeses are not pasturized. Is Ricotta cheese pasturized? It's not indicated on the label

Great Q. I want to know to. However, it seems to come under the same as cottage cheer ie, Hard. Thats not 100% helpful but its a guidline to follow.

Ricotta cheese is made by heating the whole milk and cream or whey with and acid such as yoghurt or lemon juice to a final temperature of about 205 degrees F. Since bacteria is distroyed after 15 seconds at 161 degrees F.(one method of pateurization) the ricotta has been pasteurized.
Not all soft cheeses are made using this method. Other soft cheeses, such as chevre fromage blanc and cottage cheese are not coagulate by a combination of high temperature and an acid. The coagulation takes place at lower temperatues with cultures and rennet. These types of cheeses are first pasteurized then cooled and then coagulated. Here in the states theses types of soft and fresh cheeses are usualy only sold pasturized.

To Liz - Yes, as it is a hard cheese.

To Dena - As far as I know, feta is one of the "avoid" cheeses because it's not pasteurized.

American Fetas are almost always pasteurized. The label will tell you if it is. I use Athenos and also Saladena. Both are precrumbled and I sprinkle them on salads... My OB/GYN informed me that most US brands are pasteurized.

Is laughing cow spreadable cheese safe?

laughing cow is safe. most unpasteurized cheese say so, because it is considered a good thing in the cheese world. it's pretty hard (not impossible :) ) to get unpasteurized cheese in the US, unless it is from a local farm, so don't worry about cheese too much! Even if it is unpasteurized, the chances are really slim that anything could happen to you.
