Riding the horse itself should be okay, but it's not recommended for pregant women to do it because while you're riding there's always the chance that you could fall. Falling from the horse could cause serious injury to you or your baby, so it's best to avoid riding for now.
As for holding your breath, I'm sure it's okay to hold it for a few seconds while swimming but I can't see it being good for hold it for longer periods. You'll be robbing you and your baby of oxygen and you might even black out under water if you're prone to faining and dizziness while pregnant.

I am 4 months pregnant and still competing in barrel racing. My doctor told me it was fine as long as I was careful and stopped when it became uncomfortable for me. So far I have had no problems and am hoping to be able to continue for another month at least.
